Glazed Sausage Balls
2 pounds bulk sausage, seasoned
2 eggs lightly beaten
1 cup crushed cracker crumbs
2/3 cup milk
In a small mixing bowl mix sausage, eggs, crackers, milk and sage. Shape into small balls (cookie dough scoop size) and broil for 10 minutes until cooked thoroughly. (For easy clean-up line the inside broiler drip pan and rack.) Makes approximately 4 dozen.
2 cups water
1 cup catsup
1/2 cup brown sugar
1/4 cup vinegar
1/4 cup soy sauce
Combine water, catsup, brown sugar, vinegar and soy sauce. Pour over sausage balls. Cover and simmer 15 minutes stirring carefully.
1 cup all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1 egg, beaten
2 tablespoons all-purpose flour
3/4 cup granulated sugar
4-5 cups fresh or frozen berries
1 stick butter, melted
Preheat the oven to 350 degrees F. In a medium bowl, combine flour sugar and baking powder. Make a well in the center of the dry ingredients and blend in the egg, mixing until the topping is crumbly. Set aside.
To prepare the filling, mix the flour and sugar in a small bowl. Place the berries in a large bowl and sprinkle with the flour and sugar mixture. Toss gently to evenly coat the blackberries. Transfer berry mixture to a well-greased 8X8 inch glass-baking dish and sprinkle top over berries. Drizzle melted butter evenly over the crumbly topping. Place baking dish on a baking sheet to prevent spillovers into the oven. Bake 40-45 minutes. Cover top with aluminum foil if the top is too brown and baking time remains. Makes 6 servings.
Spicy Tomato Soup
1/2 pound seasoned bulk sausage
1 medium onion, chopped
1 small green pepper
1 can (28 ounces) diced tomatoes, underlined
1 can (14 1/2 ounces) beef broth
1 can (8 ounces) tomato sauce
1/2 cup picante sauce
1 1/2 teaspoons sugar
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 to 3/4 shredded mozzarella cheese
In a large saucepan, cook the sausage, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in tomatoes, broth, tomato sauce, picante sauce, sugar, basil and oregano. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Sprinkle with cheese. Makes 6 servings.
